You are what you eat, don’t be fast, cheap easy or fake. Any dish can be modified based on your dietary needs. Healthy eating doesn’t have to be boring. It can still be fun and adaptable to your schedule and your favorite types of dishes.

Crusted Chicken Breasts with Zucchini Pasta.

Ingredients

  • 4 thinly sliced Chicken Breast
  • 1/2 C of almond flour
  • 1/4 C of flour
  • 1 TBSP Italian seasoning
  • 1 TBSP garlic powder
  • 1 TSP salt and pepper
  • 2 eggs beaten
  • 1 C of Parmesan cheese
  • 3 TBSP olive oil
  • 1 C of pre-made or jar marinara
  • 1 C of Mozzarella
  • 2 TBSP of chopped Parsley
  • 4 C of zucchini noodles prepared accordingly

Preheat oven to 350. Lightly grease baking dish. In bowl combine all dry ingredients. Pat chicken dry on both sides. Dredge chicken by coating each piece with beaten egg and place into dry ingredients.

Brown chicken on both sides until its light golden brown. Move to dish. Once all chicken has been browned place the baking dish into the oven and bake for 15 minutes.

Remove from oven place chicken breasts over zucchini noodles and top with marinara and mozzarella.
