Philly Style Stuffed Peppers

Ingredients 
8oz Sirloin steak thinly sliced 
5 Bell Peppers
1 C Mushrooms
1 small red onion 
Parsley
2 TSP Olive Oil 
1 C Mozzarella Cheese with Parmesan mix 
1 C Ranch 
2 TSP coconut amino
Salt & Pepper

Preheat oven to 400. Oil pan. Hollow out green peppers, bake at 20 minutes open side face up. Once finished cool. 

Slice red onion, red pepper and mushrooms thin. Slice steak against grain, thin. 

Heat skillet over medium high heat with olive oil. Cook steak until slightly pink, remove and cool. Add additional 1 TBSP of olive oil, add mushrooms, red peppers and onions. Cook until tender and add steak, cook additional two minutes. Mix ranch, coconut amino, salt and pepper and parsley.  Add sauce to veggie and steak mixture. Fill peppers, sprinkle with cheese, cook for and additional 5 minutes until cheese is melted. Top with additional parsley.
