How to prepare best Thanksgiving Fest

The greatest memories are made gathered around the table with family and friends. Prepare a feast that will not only wow them but will most certainly wine and dine your guests.

Because this season isn’t about what’s on the table but who fills the chairs. 

Oven Roasted Turkey 

Ingredients
12 pound Turkey thawed
8 TBSP butter cut into 1 TBSP pieces 
2 1/2 Yellow Onions halved 
6 garlic cloves peeled 
3 lemons halved 

Dry Rub
3 TSP Salt
3 TSP fresh or dry thyme 
2 TSP fresh or dry sage
1 TSP paprika 
1 TSP pepper 
1 TSP ground mustard 

Pre heat oven to 325. Combine herbs in small bowl, mix well.  Remove turkey from package, remove neck and gizzards. Pat skin dry and cavity. Separate skin with fingers from meat near breasts, insert butter spread evenly. Rub dry rub into whole turkey, breasts, legs, wings, inside cavity. Place onion, garlic, lemon halves inside cavity. 

Put bird in roasting pan, put foil over breasts. Cook turkey for two hours. Remove foil, increase temp to 400, cook one more hour or until temp reads 165 and skin is crispy. Let rest before carving. * If bird weighs more increase by 15 mins per pound*

Green Bean Casserole 

Ingredients 
1LB Fresh Green Bean’s 
4TBSP Salted Butter
1 large onion diced 
8 oz sliced mushrooms 
4TBSP minced garlic 
2 C Fried Onions 
1/2 C Parmesan cheese grated 

Cream of Mushroom 

Ingredients 
2 TBSP Butter
1 C diced mushrooms
1 TSP Thyme
2 TSP Salt
1 Garlic clove minced 
1 TSP Onion powder
2 TBSP Flour
1/2 C Beef Stock
1/2 C Milk

Melt butter in pan at medium heat, add mushrooms, onion, thyme and garlic, 1 TSP salt and pepper cook until softened 5-7 minutes. Add flour to pot, coat and cook for one minute. Add milk and broth whisk until incorporated, bring to a boil until thick 2-5 minutes, let cool. 
Heat 4TBSP butter cook onions until caramelized 7-8 minutes. Add mushrooms, garlic and cook one minute, let it cool. 
Cook green beans in large pot of boil water 6-7 minutes, drain and let it cool. 


Preheat 350. Add onion mushroom mixture to cream of mushroom sauce, stir to mix. Sprinkle with parmesan cheese bake 25 minutes. Remove from oven, sprinkle with french onions, cook 5 minutes longer. 

Sweet Potato Casserole 

Ingredients

5 sweet potatoes  pre-cooked and mashed 

1/2 C Sugar 

1/2 TSP Salt

 1/4 C butter melted

 1/3 C heavy cream

 1 TSP vanilla

 2 Eggs

 1/2 C brown sugar

 1/3 C Flour 

1 TSP Cinnamon 

1/4 C butter softened 

1/2 C pecans or walnuts 

1 1/2 C mini marshmallows 


Mix potatoes, sugar, eggs, butter, cream, vanilla, mix until smooth, pour into 9×13 dish.  Mix brown sugar, flour, cinnamon and butter with pastry cutter. Stir in pecans sprinkle on top. Bake 25-30 minutes, sprinkle marshmallows cook another 10 minutes until melted.
