I love a dish that is simple, one pan and brings your family to the table. This dish does exactly that and can be modified to your families favorite Mexican veggies and spices.

Mexican Casserole Bake

Ingredients

  • 2 LB Grass Fed Beef
  • 2 TSP Chili Powder
  • 1.5 TSP Cumin
  • 2 TSP Garlic Powder
  • 1 TSP Paprika
  • 1/2 TSP Salt
  • 1/2 TSP Pepper
  • 1/4 TSP Cayenne
  • 2 TBSP minced garlic
  • 1 medium onion diced
  • 2 green peppers diced
  • 3 medium sweet potatoes or russet diced (about 2 cups)
  • 3/4 cup of Salsa
  • 1 (4oz) can of green chilies
  • 1 (4oz) can of black olives
  • 1 (14oz) can of fire roasted tomatoes diced
  • 2 eggs beaten
  • 2 cups of Mexican Cheese

Instructions:

Preheat oven to 350. In skillet over medium heat brown ground beef. While its browning add in all spices, garlic and white onion. While it continues to cook add onion, potatoes, salsa, chillies, olives, and tomatoes to cooking dish. Drain meat, add to veggie mixture, add eggs and cheese. Cook in oven and bake for 45 minutes to one hour, until potatoes are baked through.

Can be added to taco salad, rice, greens.

Add toppings such as jalapeños, avocado, shredded lettuce, sour cream.
