Put pork on your fork! Bacon wrapped pork loin that is!!!
This is a great dish as we come into “FL Fall” I love pairing it with a good Orzo. Banza is my jam and has healthy benefits.
Ingredients
Pork loin
8-10 slices of bacon
1 LB Pork Tenderlion
Olive Oil
1/4 C of Maple Syrup
3TBSP of minced garlic
Salt and Pepper Pork, smother in minced garlic. Wrap in bacon from one end to other, facing down.
Cook at 425 for 25-35 minutes until thermometer reads 155 in thick part of meat.
Orzo Pasta
1/2 C Banza Orzo
2 TBSP Coconut Oil
4 TSP minced garlic
1/2 Pound of peeled Shrimp
1/2 c diced Bella mushrooms
1/2 c sun dried tomatoes drained
1/2 coconut milk
1/3 Parmesan cheese
Salt & Pepper to taste
Boil water according to package directions cook 8-9 minutes. While orzo cooks sauté onion, garlic and mushrooms. Add in tomatoes and spinach cook until soft. Add shrimp, Italian seasoning, salt and pepper. Cook for 3-5 more minutes.
Finish dish with parsley and parmesan cheese.
